The subtitles are in the MKV container. I personally haven't had success in extracting subtitles from MKV containers, but with mkvmerge, you can easily switch among the subtitles that are already in the MKV container. I routinely do that. For example, when I originally obtained Casino Tycoon, the default was Chinese subs. I changed it to a default of English subs. You could just as easily turn the subtitles off or add additional subtitles, in Spanish for example.
